Pulled Pork Tacos
- 4- 1/2 pounds Pork Loin Roast, Fat Trimmed
- 1/4 cups Brown Sugar
- 2 teaspoons Ground Chili Powder
- 1 teaspoon Ground Cumin
- 1- 1/2 teaspoon Salt
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 12 ounces, fluid Coke Zero
- 10 ounces, weight Enchilada Sauce
- Cut any visible fat from the pork loin.
- In a small bowl, mix together dry ingredients and rub all over pork loin.
- Set pork in the insert of your crockpot.
- In a bowl, mix together Coke Zero and enchilada sauce.
- Pour over pork.
- Place lid on top of insert.
- Cook on low for 8 to 10 hours or until fork tender.
- Shred meat with 2 forks and allow it to sit in the juices until ready to serve.
- This freezes very well.
- Meal ideas: soft tacos, hard tacos, taco salad, enchiladas, baked taquitos, quesadillas, and burritos.
