Pulled Pork Tacos

  1. Cut any visible fat from the pork loin.
  2. In a small bowl, mix together dry ingredients and rub all over pork loin.
  3. Set pork in the insert of your crockpot.
  4. In a bowl, mix together Coke Zero and enchilada sauce.
  5. Pour over pork.
  6. Place lid on top of insert.
  7. Cook on low for 8 to 10 hours or until fork tender.
  8. Shred meat with 2 forks and allow it to sit in the juices until ready to serve.
  9. This freezes very well.
  10. Meal ideas: soft tacos, hard tacos, taco salad, enchiladas, baked taquitos, quesadillas, and burritos.
