Fresh Mincemeat

  1. Core apples but do not peel.
  2. Chop into small (1/4") chunks.
  3. Place into a large bowl.
  4. Grate peel of lemon and squeeze out juice.
  5. Stir peel and juice with apples.
  6. Stir remaining ingredients into apple mixture until well blended.
  7. Cover and refrigerate overnight or 24 hours before using.
  8. Mincemeat keeps well in refrigerator for up to a month.
  9. Excellent for pies and tarts and other recipes calling for mincemeat.
