Mixed Greens with Roasted Asparagus and Apple

  1. Preheat oven to 400F.
  2. Arrange asparagus in single layer on large baking sheet.
  3. Drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper.
  4. Toss to coat.
  5. Roast 30 minutes, turning once.
  6. Let cool 5 minutes.
  7. Meanwhile, whisk remaining 1/3 cup olive oil, vinegar, honey and garlic in small bowl to blend.
  8. Place greens in large bowl.
  9. Add vinaigrette to greens and toss to coat.
  10. Mound salad on each of 8 plates.
  11. Top with diced apple and cheese, dividing equally.
  12. Arrange asparagus on top.
