Apple-Pear Puff
- 3 Tbs. unsalted butter
- 2 Tbs. granulated sugar
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 Granny Smith or other tart apple, unpeeled and thinly sliced
- 1 pear, unpeeled and thinly sliced
- 3 Tbs. prepared caramel sauce
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup milk
- 1/4 tsp. salt
- Confectioners sugar, optional
- Preheat oven to 450F.
- Melt butter in 10-inch ovenproof skillet over medium heat.
- Stir in sugar, cinnamon and nutmeg.
- Add fruit slices, and cook 4 minutes, stirring frequently.
- Drizzle with caramel sauce.
- Meanwhile, beat together eggs, flour, milk and salt until smooth.
- Pour batter over fruit, tilting skillet to distribute evenly.
- Bake pancake 10 minutes.
- Reduce heat to 425F, and bake 8 to 10 minutes more without opening oven door.
- Remove skillet, sprinkle with confectioners sugar, if desired, and serve immediately.
- (Slice into wedges after you bring it to the table.)
