Irish Stew

  1. Heat 2 tsp oil in large skillet over medium-high heat.
  2. Coat tips with flour, shaking off excess.
  3. Cook until browned on both sides and remove from heat.
  4. In a large pot, add 1 tsp oil, mushrooms, and onion; cook stirring constantly until onion is tender (about 3 min).
  5. Add meat to pot, stir in garlic, tomato paste, beef broth, sugar, beer, carrots, and potatoes-cover and simmer over low heat for about 1 hr or until thickened.
  6. Season to taste with salt in pepper.
