Skillet Fish with Lemon-Walnut Pesto
- 1/2 cup KRAFT Lite House Italian Dressing, divided
- zest and juice from 1 lemon, divided
- 4 tilapia fillets (1 lb.)
- 1/2 cup finely chopped tightly packed fresh basil
- 1/4 cup finely chopped PLANTERS Walnuts
- 1 Tbsp. KRAFT Grated Parmesan Cheese
- 2 cups hot cooked long-grain brown rice
- Mix 2 Tbsp.
- dressing and 1 Tbsp.
- lemon juice in shallow dish.
- Add fish; turn to evenly coat both sides of fish.
- Refrigerate 10 min.
- Meanwhile, combine remaining dressing, remaining lemon juice, lemon zest, basil, nuts and cheese.
- Remove fish from dressing mixture; discard dressing mixture.
- Cook fish in large nonstick skillet on medium heat 3 to 4 min.
- on each side or until fish flakes easily with fork.
- Spoon rice onto platter; top with fish and pesto.
