Meat Leftover Risotto
- 1 lb Arborio rice
- 1 cup Leftover meat
- 1/2 cup Onion
- 2 tbsp Olive oil
- 1/2 cup Red wine
- 5 cup Beef broth
- 1/2 cup Grated Parmesan cheese
- Chop the onions into small cubs and saut?
- with the olive oil
- Add the rice and brown it for about 2 minutes
- Add the wine and stir well.
- Wait 1 minute for the wine to be absorbed by the rice, and for the alcohol to evaporate
- Add 1 ladle of chicken broth, and stir well until he broth is absorbed by the rice.
- Keep doing the same: add a little of broth, stir and let it absorb, then add a little more.
- This will be repeated for about 20/30 minutes or until the rice reaches the desired consistency.
- About 15 minutes after you started adding the broth add the meat (cut into small cubes)
- When the rice is ready, add the Parmesan cheese
- Close the pot, wait 5 minutes and serve :)
