Aloo Ko Achar (Potato Salad) Recipe
- 1 1/3 lb potatoes, small if possible
- 4 x jalapeno peppers seeded and sliced into long strips
- 1 x lime, juice of salt to taste
- 1/4 c. sesame seeds, roasted, grnd, optional
- 1 tsp turmeric pwdr
- 1 tsp cumin seeds
- 2 x chiles, whole, dry, to 3
- 3 tsp corn oil, or possibly mustard oil mustard gives best flavor
- 1/2 c. water
- 1/2 c. coriander, fresh, minced
- Boil potatoes in jackets.
- When done, peel and cut into small pcs.
- In a suitable bowl, combine potatoes, turmeric, salt, grnd sesame seeds, lime juice, half of the green coriander and water and mix thoroughly.
- In a small pan heat mustard oil till warm; add in cumin seeds and red chiles.
- Fry them till brown and then add in jalapeno pepper.
- Let it cook a minute or possibly so.
- Pour it over potatoes in the bowl and mix them thoroughly; garnish with remaining green coriander leaves.
- SERVES: 6-8
