Quick Pickled Daikon with Shio-koji and Wasabi in 10 minutes

  1. Peel the diakon and slice it thinly.
  2. (Cut into thin, bite-size slices like shown in the photo.)
  3. Combine with the daikon with the ingredients, and wait 10 minutes.
  4. Squeeze out the water.
  5. Add as much wasabi as you like, mix and it's done.
  6. Other ingredients, like turnips and kohlrabi, also work well in this recipe.
