Quick and tasty pasta with sundried tomatoes
- 400 gr. pasta spirals
- 6 sundried tomatoes
- 100 gr. cured goats cheese (any cheese would work)
- 5 slices cured turkey breast (any other cured meat would be fine)
- 1 bayleaf
- 1 dash olive oil
- Fill a pan with water and bring to the boil.
- Add the bayleaf, a little oil (to stop the pasta from sticking) and a pinch of salt.
- When the water is boiling add the pasta and boil according to instructions on the packet (about 10 mins)
- Prepare the other ingredients, finely slicing the turkey breast and tomatoes, chopping the sage and grating the cheese.
- Put some boiling water in your serving dish to warm it up.
- Dry the dish, drain the pasta and put it in the serving dish.
- Add the rest of the ingredients and mix well
- Finally add lots of freshly ground black pepper, serve and, most importantly, enjoy!!
