Stuffed Bell Peppers
- 6 medium green peppers
- 1 lb ground beef
- 13 cup onion, chopped
- 1 (14 1/2 ounce) can stewed tomatoes
- 34 cup Minute Rice, cooked
- 2 tablespoons Worcestershire sauce
- salt and pepper
- 1 cup shredded cheese (I use Colby & Monterey Jack)
- Preheat oven to 350F
- Cut off tops of green peppers; remove seeds and membrane.
- Precook green peppers cups in boiling salted water, about 5 minutes.
- Drain; sprinkle inside with salt.
- Brown meat and onions.
- Add tomatoes, rice, Worcestershire sauce and salt and pepper to taste.
- Cover and simmer until rice is almost tender, about 5 minutes.
- Add 1/2 cup cheese.
- Stuff peppers and stand upright in 10 x 6 x 1 1/2 inch baking dish.
- Sprinkle with the remaining cheese.
- Bake uncovered at 350F for 25 minutes or until hot.
