Pork Tenderloin With Kudzu Salsa
- 12 cup soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons teriyaki sauce
- 2 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 lb pork tenderloin
- 12 teaspoon oregano
- 12 teaspoon cumin
- 14 cup honey
- 2 tablespoons brown sugar
- 1 cup kudzu, vine tips of (freshly boiled and diced)
- 1 large tomatoes, diced
- 1 tablespoon red onion, minced
- 1 teaspoon olive oil
- 14 teaspoon salt
- 2 tablespoons honey
- 1 tablespoon cilantro
- 1 tablespoon lime juice
- Combine first 5 ingredients in a large shallow dish or heavy-duty Ziploc plastic bag; add pork.
- Seal or cover and marinate for 6-8 hours in the refrigerator.
- To prepare salsa, combine all ingredients, cover and chill until ready to serve.
- Preheat oven to 400F and spray a roasting pan with cooking spray.
- Remove pork from marinade, discarding marinade.
- Stir together honey and brown sugar; brush pork with honey mixture.
- Place meat in prepared roasting pan; sprinkle with oregano and cumin.
- Bake for approximately 25 minutes or until your meat thermometer reaches 160F.
- Cut pork into slices; serve with Kudzu salsa.
