Inexpensive & Healthy Chicken and Egg Rice Bowl
- 1 as much (to taste) Plain cooked rice
- 150 grams Chicken breasts
- 1/2 Onion
- 2 Eggs
- 200 ml Dashi stock
- 2 tbsp Soy sauce
- 2 tbsp Mirin
- 1/2 tbsp Cooking sake
- Remove the skin from the chicken breasts, and cut into bite-sized pieces.
- Marinate with sake (not listed) for about 30 minutes.
- Add all the ingredients and onion to a frying-pan, and simmer for about 3 - 5 minutes over a low heat.
- When the onion changes colour slightly, add the chicken breasts, and continue simmering for another 5 - 10 minutes over low heat.
- When the chicken is cooked through, pour in the beaten eggs from the side of the pan, and stir slowly.
- Put the rice in a bowl, add the chicken and egg on top, and it's done!
