Low-Fat Oatmeal Cookies
- 1 x margarine
- 1/2 cup sunflower oil
- 13 cup brown sugar
- 2 tablespoons sugar
- 1 each egg whites
- 3/4 teaspoons vanilla extract
- 3 tablespoons water
- 2 cups rolled oats
- 13 cup flour, all-purpose
- 13 cup whole wheat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon ground
- Preheat oven to 350F (180C).
- Grease cookie sheet with margarine.
- Cream oil with sugars; add egg white, vanilla and water, mixing well; add oats, flours, salt, baking soda and cinnamon, mixing only until blended.
- Do not overmix or you will lose the texture of the oats.
- Drop batter by teaspoonfuls onto cookie sheet and bake for 10 to 15 minutes.
- Makes 3 dozen cookies.
