Low-Fat Oatmeal Cookies

  1. Preheat oven to 350F (180C).
  2. Grease cookie sheet with margarine.
  3. Cream oil with sugars; add egg white, vanilla and water, mixing well; add oats, flours, salt, baking soda and cinnamon, mixing only until blended.
  4. Do not overmix or you will lose the texture of the oats.
  5. Drop batter by teaspoonfuls onto cookie sheet and bake for 10 to 15 minutes.
  6. Makes 3 dozen cookies.
  7. Per Serving: Calories 62, Fat 3 g, Sodium 27 mg, Cholesterol 0 mg.
