Chicken Chalupas
- 6 flour tortillas
- 2 chicken breasts, boiled and cut into small chunks
- 1 cup nonfat sour cream
- 8 ounces fat-free cream cheese
- 1 cup monterey jack cheese
- 3 green onions, sliced
- 8 ounces green chilies
- 1 cup cheddar cheese
- 1 12 cups spinach
- In a large bowl, sour cream and cream cheese.
- Add Monterrey Jack cheese , onions, green chilies and spinach.
- Add chicken.
- Put portions into tortilla shells and roll up.
- Place seam side down in a 9 x 13 pan.
- Pour any remaining mixture over top.
- Cover with cheddar cheese.
- Cover with aluminum foil and back at 350 degrees for 40-50 minutes.
