Chocolate Chip and Pecan Zucchini Loaf

  1. In a large bowl beat eggs until frothy.
  2. Beat in oil and sugars.
  3. Stir in zucchini and vanilla.
  4. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, chopped pecans and chocolate chips.
  5. Stir well and add to zucchini mixture.
  6. Stir until moistened.
  7. Pour into greased loaf pan (9x5 inch).
  8. Bake for 55-60 minutes in 350 F oven.
  9. Test the loaf by inserting a toothpick to see if it comes out clean.
  10. Let the loaf stand for 10 minutes before removing from the pan onto a wire rack for cooling.
