Garlic Chard Roti (Flatbread)
- 6 -8 garlic cloves, finely minced
- 3 cups chard leaves, finely chopped
- 2 cups whole wheat flour
- 1 tablespoon oil
- salt
- 1 teaspoon turmeric
- 1 tablespoon cayenne (or to taste) or 1 tablespoon red chili flakes (or to taste)
- 2 teaspoons garam masala (optional)
- Combine all ingredients in a large bowl, pressing gently.
- Add water in small quantities until you can gather everything together and the mixture becomes a dough.
- It should be soft but not sticky.
- Kneed for 5 minutes.
- Divide dough into 10 portions and roll them between the palms of your hands into balls.
- Gently press them down to slightly flatten them.
- Dust each portion with whole wheat flour and roll into circles with a rolling pin.
- If they stick, dust with more flour.
- Heat an iron skillet or non-stick pan.
- Place each rolled circle onto the skillet, cook for a minute until there are tiny brown spots on the underside, then flip it over and repeat on the other side.
- Spray or drizzle a little oil on each side and cook the bread while gently pressing down until the bread becomes slightly crisp and dark.
- Wrap the rotis in a towel and store them in air tight containers.
