Chicken udon with garlic ginger sauce
- 1/2 cup soy sauce
- 1 tbsp fresh lemon juice
- 2 tbsp rice vinegar
- 3 clove minced garlic
- 1 tbsp fresh minced ginger
- 2 tsp sesame oil
- 1 14.2 package of udon noodles
- 8 oz of boneless, skinless chicken breast, small cube
- 2 cup baby bok choy
- 1 tsp vegetable oil
- 1/8 tsp salt
- Mix all the sauce ingredients and set aside.
- In skillet on medium heat, add teaspoon oil and brown chicken.
- Add bok choy and sauce, turn heat to low and cover.
- Simmer until bok choy is wilted but retains a mildly crisp texture, this takes just a few minutes.
- Add udon, stir and heat through.
- Enjoy this fast delicious meal!

- I added a handful of pre cut crinkle carrot chips with cooking chicken.
- Added chow mein noodles to serve on top to serve.
