Autumn Burgers

  1. Wash and dry sweet potato.
  2. Cut off ends.
  3. Using a mandoline slicer, cut 1/8 " thick slices lengthwise.
  4. Preheat oven to 425F.
  5. On a parchment or silicone lined baking tray, spread out sweet potato slices.
  6. You will most likely need two trays.
  7. Spray potatoes with oil.
  8. I use a misto sprayer.
  9. You can brush them lightly with oil.
  10. Sprinkle sea salt on top and bake for 15 minutes or until lightly golden.
  11. In a large bowl combine ground turkey, spices, onion, craisins and parsley.
  12. Mix well and form into 4, 4 ounce patties.
  13. In a hot skillet with heat set to medium, place patties.
  14. You may also grill.
  15. Cook patties 4-5 minutes a side.
  16. Serve burgers on the buns with sweet potato chips on top and as a side.
  17. Enjoy your autumn flavored burgers!
