Autumn Burgers
- 1 lb 85 % lean ground turkey
- 1/4 cup minced onion, red is what I use
- 1/4 cup craisins, chopped
- 1/2 tsp celery seed, you may use fresh celery, then use 1/4 cup fresh-finely chopped
- 1 tbsp fresh parsley, chopped
- 1/4 tsp salt and pepper
- 4 hamburger buns
- 1 sweet potato
- 1 tbsp oil, I use extra virgin olive oil
- 1/2 tbsp sea salt or kosher salt
- Wash and dry sweet potato.
- Cut off ends.
- Using a mandoline slicer, cut 1/8 " thick slices lengthwise.
- Preheat oven to 425F.
- On a parchment or silicone lined baking tray, spread out sweet potato slices.
- You will most likely need two trays.
- Spray potatoes with oil.
- I use a misto sprayer.
- You can brush them lightly with oil.
- Sprinkle sea salt on top and bake for 15 minutes or until lightly golden.
- In a large bowl combine ground turkey, spices, onion, craisins and parsley.
- Mix well and form into 4, 4 ounce patties.
- In a hot skillet with heat set to medium, place patties.
- You may also grill.
- Cook patties 4-5 minutes a side.
- Serve burgers on the buns with sweet potato chips on top and as a side.
