Baked Veggie Frittata
- 1 medium chopped zucchini
- 1 chopped bell pepper
- 2 cups spinach
- 1 cup chopped mushroom
- 1 chopped tomato
- 14 cup thinly sliced vidalia onion
- 12 cup reduced-fat feta cheese
- 23 cup low fat cottage cheese
- 1 (16 ounce) carton Egg Beaters egg substitute
- 2 tablespoons reduced-fat parmesan cheese
- Preheat oven to 375.
- Chop all vegetables and put in a bowl.
- Season with salt and pepper (or other seasoning) to taste.
- Add egg beaters, then feta and cottage cheese.
- Mix well.
- Coat baking dish with cooking spray.
- Pour mixture into dish.
- Top with parmesan cheese.
- Bake for 45 minutes or until lightly brown on top.
