Peanut Coriander Lamb Cutlets

  1. Combine coriander, pepper, garlic and lemongrass in mortar and pestle or food processor until finely chopped.
  2. Add peanut spread and lemon juice, mix until a smooth paste is formed.
  3. Set aside 1/4 cup.
  4. Coat the lamb cutlets in the paste.
  5. Marinate for a minimum of 30 minutes.
  6. Cook the cutlets on a preheated BBQ over a mediem heat for 6- 8 minutes, turning once, for medium cooked meat.
  7. Serve with a dollop of the reserved 1/4 cup marinade and freshly cooked asparagus and baby carrots.
