Peanut Coriander Lamb Cutlets
- 1 medium sized bunch coriander, stalks removed
- good grinding of black pepper
- 1 stick lemongrass, peeled, optional Safeway 4 ct For $5.00 thru 02/09
- 1/2 cup KRAFT* Light Smooth Peanut Spread
- juice of 1/2 lemon Safeway 4 ct For $5.00 thru 02/09
- 12 frenched lamb cutlets, visible fat removed
- Combine coriander, pepper, garlic and lemongrass in mortar and pestle or food processor until finely chopped.
- Add peanut spread and lemon juice, mix until a smooth paste is formed.
- Set aside 1/4 cup.
- Coat the lamb cutlets in the paste.
- Marinate for a minimum of 30 minutes.
- Cook the cutlets on a preheated BBQ over a mediem heat for 6- 8 minutes, turning once, for medium cooked meat.
- Serve with a dollop of the reserved 1/4 cup marinade and freshly cooked asparagus and baby carrots.
