Bread And Butter Pickles / Wisatefair2001 Recipe
- 4 lb cucumbers (4 to 6 ") cut into slices
- 2 lb onions (about 8 small) thinly sliced
- 1/3 c. canning salt
- 2 c. sugar (c & h)
- 2 Tbsp. mustard seed
- 2 tsp turmeric
- 2 tsp celery seed
- 1 tsp peppercorns
- 3 c. vinegar (heinz)
- Combine cucumber and onion slices in a large bowl.
- Layer vegetables with salt; cover with ice cubes.
- Let stand 1 1/2 hrs.
- Drain; rinse and drain again.
- Combine remaining ingredients in a large saucepan; bring to boil.
- Add in liquid removed cucumbers and onions and return to a boil.
- Pack warm pickles and liquid into warm jars, leaving 1/4" head space.
- Remove air bubbles.
- Adjust 2 piece caps.
- Process 10 min in boiling water bath canner.
- Yield: 7 pints (about)
