Kielbasa with Squash and Rotini

  1. Cook noodles and drain.
  2. Place in a large mixing bowl.
  3. Drizzle with EVOO to prevent sticking and add flavor.
  4. Alternatively, top noodles with cubed butter.

  6. Heat olive oil in a large saute pan.
  7. Cook sausages fully.
  8. Add to noodles.
  9. Add a touch more olive oil.
  10. Saute veggies.
  11. Add garlic when nearly tender.
  12. Saute until fragrant.
  13. Add to noodle mixture.
  14. Add cheese and pepper.
  15. Add sea salt for crunch.
  16. Add enough EVOO to cover.
  17. Toss
  18. Variations; Fresh herbs, spinach, arugala, shallots, mustard, beer, horseradish, crushed pepper flakes, habanero, sweet potatoes, red potatoes, celery root, shrimp, chicken, roasted bell peppers
  19. Try omitting oil and toss with melted cream cheese instead
