Tex Mex Pasta Salad Recipe
- 12 ounce. corkscrew pasta
- 1 c. mayonnaise
- 1/2 c. Italian dressing
- 1 (4 ounce.) can minced green chilies, liquid removed
- 1 teaspoon chili pwdr
- 1 teaspoon grnd cumin
- 1 (16 ounce.) can red kidney beans, liquid removed
- 1 lg. tomato, minced
- 1 sm. green pepper, minced
- 1 (8 ounce.) can corn, liquid removed
- 1 1/2 c. minced celery
- 2 tbsp. fresh chopped parsley
- Cook pasta as package directs, drain and rinse with cool water till completely cold.
- In large salad bowl, blend mayonnaise, Italian dressing, chilies, chili pwdr and cumin.
- Toss with pasta and remaining ingredients.
- Cover and chill.
- Garnish with additional parsley.
- Serves 6.
