Fudgy Peppermint Cake (Gluten-Free Recipe)

  1. Heat oven to 325F.
  2. Grease 12-cup Bundt pan; sprinkle with unsweetened cocoa.
  3. Set aside.
  4. Combine gluten-free flour blend, baking powder, baking soda and salt in bowl.
  5. Set aside.
  6. Bring water to a boil in 2-quart saucepan; remove from heat.
  7. Add baking chocolate; stir until melted.
  8. Combine sugar, butter and 1 teaspoon peppermint extract in bowl.
  9. Beat at medium speed, scraping bowl often, until creamy.
  10. Add eggs; beat at high speed until well mixed.
  11. Gradually add flour mixture alternately with chocolate mixture, beating at low speed until well mixed.
  12. Stir in chocolate chips.
  13. Pour batter into prepared pan.
  14. Bake 50-60 minutes or until toothpick inserted in center comes out clean.
  15. Cool 15 minutes in pan; invert onto cooling rack.
  16. Cool completely.
  17. Combine powdered sugar, 1 tablespoon butter and 1/2 teaspoon peppermint extract in bowl.
  18. Beat at low speed, adding enough milk for desired glazing consistency.
  19. Beat at medium speed until smooth.
  20. Drizzle glaze over cooled cake; sprinkle with crushed candy.
