Thai Green Mussels
- 2 kg mussels, cleaned and debearded
- 2 stalks lemongrass
- 2 green chilies
- 1 green pepper
- 5 spring onions
- 4 tablespoons oil
- 2 garlic cloves, crushed
- 3 cm of grated ginger
- lime, juice of, 2
- 400 ml coconut milk
- 2 tablespoons of chopped coriander
- Clean mussels.
- chop lemongrass, chillies green pepper, and spring onions and add to the pan with the oil, garlic and ginger.
- cook for 5 minutes.
- add the lime juice and coconut milk.
- Season and simmer for ten minutes.
- Stir in the mussels, cover and cook for 3-4 minutes until all the mussels have opened.
- sprinkle with coriander and serve with nice bread.
