Thai Green Mussels

  1. Clean mussels.
  2. chop lemongrass, chillies green pepper, and spring onions and add to the pan with the oil, garlic and ginger.
  3. cook for 5 minutes.
  4. add the lime juice and coconut milk.
  5. Season and simmer for ten minutes.
  6. Stir in the mussels, cover and cook for 3-4 minutes until all the mussels have opened.
  7. sprinkle with coriander and serve with nice bread.
