Zesty Carrots
- 6 to 8 carrots, cooked and cut into strips
- 1/4 cup water
- cooking liquid from carrots
- 2 tbsp. grated onions
- 2 tbsp. prepared horseradish
- 1/2 cup mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 cup Saltine cracker crumbs
- 1 tbsp. butter, softened
- 1 dash paprika
- Chopped parsley, for garnish (optional)
- Arrange carrot strips in shallow casserole.
- In small bowl combine water, onion, horseradish, mayonnaise, salt and pepper.
- Pour over carrots.
- Top with a mixture of cracker crumbs, butter and paprika.
- Bake at 375F for 15 to 20 minutes.
- Garnish with parsley.
