Chicken Salad Nicoise

  1. Place the chicken strips into a large resealable plastic bag.
  2. Combine seasonings and tequila mix.
  3. Add marinade to the bag with the chicken.
  4. Seal the bag, and place in the refrigerator for at least an hour or overnight.
  5. Prepare George forman Grill and cook chicken 4 to 6 minutes or until done.
  6. Peel and slice potato; arrange slices in a shallow dish.
  7. drain green beans, and trim ends.
  8. Place beans over potatoes in dish.
  9. Set aside.
  10. Combine oil, vinegar, parsley, garlic, salt, and pepper in a jar.
  11. Cover tightly, and shake until well blended.
  12. Drizzle half of dressing over potato-bean mixture.
  13. cover mixture with plastic wrap, and chill 30 minutes.
  14. Set remaining dressing aside.
  15. Arrange lettuce leaves on 4 dinner plates.
  16. Spoon potato-bean mixture on lettuce leaves.
  17. Divide tomatoes, red onion, green pepper, and chicken evenly on potato-bean mixture.
  18. Pour remaining dressing over top.
  19. garnish salad with capers.
  20. cover each salad with plastic wrap, and chill at least 2 hours.
  21. Serve chilled.
