Peach Oatmeal Muffins Recipe
- 1 (16 ounce.) can cling peach slices
- 2 c. whole wheat flour
- 3/4 c. sugar
- 3 teaspoon baking pwdr
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 c. quick oats
- 2 Large eggs, well beaten
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 c. lowfat milk
- 1/4 c. veg. oil
- Drain peaches, cut in small pcs and set aside.
- Sift together flour, sugar, baking pwdr, salt, soda, cinnamon and nutmeg.
- Add in oats and peaches, stir to coat peaches.
- Combine Large eggs, lowfat milk and oil.
- Add in to flour mix, stirring just till dry ingredients are moistened.
- Fill greased muffin tins about 3/4 full.
- Bake at 350 degrees for about 35 min.
- Cold in pans 5 min.
- Serve hot.
