Black Bean Mole Recipe
- 1 1/2 tsp Cumin seeds
- 1 1/2 tsp Dry oregano
- 1 Tbsp. Sesame seeds
- 2 Tbsp. Pure grnd Pasilla chili pwdr
- 1 c. Cooked black beans rinsed if canned
- 1 c. Minced tomatoes
- 1 Tbsp. Worcestershire sauce
- 1 c. Chicken stock
- 1 tsp Honey
- 1/4 c. Loosely-packed cilantro leaves
- 2 tsp Lime juice
- 2 Tbsp. Butter Salt to taste Freshly-grnd black pepper to taste
- In a small skillet, toast the cumin seeds, oregano, sesame seeds, and chili pwdr, stirring constantly for 3 min, and then place in a blender.
- Then add in the beans, tomatoes, Worcestershire sauce, chicken stock, honey, cilantro, lime, butter, and salt and pepper to taste.
- Puree till smooth.
- Now transfer the mole to a medium saucepan and heat till it thickens, about 5 min.
- Serve over poultry or possibly fish accompanied by some tortilla chips.
- This recipe yields about 3 c. of sauce.
