Wild Rice With Shrimp and Cilantro

  1. In a large skillet, heat oil until hot.
  2. Add the onion and peppers and cook, stirring occasionally until limp; about 5 minutes.
  3. Stir in garlic, hot water and rice; mix well.
  4. Heat to boiling, stir, then reduce heat to a simmer and cook for about 15 minutes.
  5. Stir in lime juice, shrimp, salt and pepper.
  6. Cook 5-10 minutes longer.
