Sesame Grilled Tofu with Veggies
- 24 oz. firm or extra firm lite silken tofu, cut into thick slices
- 1/2 cup sesame seed salad dressing
- 2 sliced zucchinis
- 1/2 lb. large fresh s, sliced
- 4 medium tomatoes, cut into wedges
- 2 cups instant brown rice, uncooked
- 1/2 cup fresh parsley, chopped
- 1 medium apple, cored and sliced
- 4 medium oranges, separated into sections
- 2 kiwis, peeled and sliced
- 32 fl oz (4 cups) drinking water
- Arrange tofu slices in a shallow baking dish; brush both sides with dressing.
- Brush remaining dressing on vegetables.
- Coat grill basket with cooking spray; start grill.
- Place tofu and vegetables carefully into grill basket; avoid breaking the tofu slices.
- Grill about 10 min., turning tofu once and vegetables 2 to 3 times.
- Cook rice according to package directions.
- Stir in parsley; cover until ready to serve.
- Divide meal into 4 equal portions.
- Toss oranges, kiwis and apples in a medium bowl; serve each person 1/4 of salad.
- Serve each person an 8 fl oz glass of water with meal.
