Sesame Grilled Tofu with Veggies

  1. Arrange tofu slices in a shallow baking dish; brush both sides with dressing.
  2. Brush remaining dressing on vegetables.
  3. Coat grill basket with cooking spray; start grill.
  4. Place tofu and vegetables carefully into grill basket; avoid breaking the tofu slices.
  5. Grill about 10 min., turning tofu once and vegetables 2 to 3 times.
  6. Cook rice according to package directions.
  7. Stir in parsley; cover until ready to serve.
  8. Divide meal into 4 equal portions.
  9. Toss oranges, kiwis and apples in a medium bowl; serve each person 1/4 of salad.
  10. Serve each person an 8 fl oz glass of water with meal.
