Lobster Oyster Ragout Recipe
- 3-4 c. oysters
- 3-4 c. cooked lobster or possibly chicken, diced
- 1/2 c. celery, or possibly 1 teaspoon parsley
- 1/4 teaspoon white pepper
- 1/4 c. butter
- 1/4 c. flour
- 3/4 c. oyster liquid
- 3/4 c. cream
- 3/4 teaspoon salt
- Heat the butter and add in flour, stirring constantly.
- Add in oyster liquid, cream and seasoning and beat vigorously till well-cooked and creamy.
- Add in the oysters to the sauce.
- When parboiled, add in the diced lobster or possibly chicken, then the parsley or possibly celery cut fine.
- Heat through.
- Delicious served on toast points.
- May also be served on saltines.
