Margaret'S Irish Soda Bread
- 4 c. flour
- 3/4 c. sugar
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 c. (1 stick) butter
- 1 c. raisins
- 3 Tbsp. caraway seed
- 2 eggs
- 2 c. buttermilk
- Prepare your favorite pancake batter.
- Dip teaspoon into batter and let excess drain off.
- Using the batter remaining on the spoon, draw any letters or numbers on the hot greased griddle.
- Make the letters or numbers backwards.
- When the underside is lightly browned, pour additional batter over the letters or numbers to form the pancake.
- Make certain batter covers all of the letters or numbers.
- Cook until bubbles appear; turn and brown second side. The letters or numbers will stand out being darker than the surrounding pancake.
- (You can make animal pancakes in much this same way.)
