Great! Mandarin, Almond Salad Recipe
- 2 tbsp. sugar
- 1/2 c. slivered almonds
- 1/2 c. extra virgin olive oil
- 1/2 c. vinegar (I use balsamic)
- 1/4 c. sugar
- 1/2 teaspoon salt
- 2 teaspoon fresh parsley
- 2 c. celery, sliced
- 6 green onions, sliced
- 1 can (11 ounce.) mandarin oranges
- 1 head romaine lettuce
- 1 head butter or possibly leaf lettuce
- Cook 2 Tbsp.
- sugar and almonds together in small skillet with small amount of oil till sugar melts and almonds become light brown, put aside.
- Mix oil, vinegar, sugar, salt, parsley in blender.
- Cut up greens and mix.
- Put aside in plastic bag.
- When ready to serve, put greens and dressing together in a plastic bag and mix.
- Then put in a bowl with mandarin slices and almonds.
- Serve.
