Banana and Coconut Soup
- 12 green bananas (or plantains)
- 2 cups chicken stock
- 2 cups coconut milk
- 1 cup coconut cream
- 1 tablespoon oil
- 1 onion, chopped finely
- 12 hot pepper, cleaned and finely chopped
- Puree the bananas in food processor.
- Mix with chicken stock.
- Pass through fine mesh sieve or use stick blender.
- Saute the onion and pepper until the onion is translucent.
- Add everything together and heat, but do NOT boil.
- Serve hot with croutons.
- Garnish as you please, fresh parsley would be nice.
