Minestrone Meatball Soup Recipe
- 1 c. minced onions
- 1 c. minced celery
- 2 garlic cloves, chopped
- 3 (14 1/2 ounce.) cans chicken broth
- 1 (28 ounce.) can tomatoes, undrained, cut up
- 1 (6 ounce.) can tomato paste
- 1 c. minced carrots
- 1 c. minced peeled potatoes
- 1/2 c. minced fresh parsley
- 1 teaspoon dry basil leaves
- 1 teaspoon dry thyme leaves
- 1 c. (3 ounce.) uncooked rotini (spiral macaroni)
- 1/2 recipes cooked turkey meatballs
- Spray Dutch oven or possibly large saucepan with nonstick cooking spray.
- Heat over medium-high heat till warm.
- Add in onions, celery and garlic; cook and stir till crisp-tender.
- Stir in remaining ingredients except rotini and meatballs.
- Bring to a boil; reduce heat.
- Cover; simmer 30 min.
- Stir in rotini and meatballs; simmer uncovered an additional 10-12 min or possibly till vegetables and rotini are tender.
- If you like, serve with Parmesan cheese.
- 8 (1 1/2 c. servings).
- Serving Size: 1 1/2 c.. 200 calories.
