Minestrone Meatball Soup Recipe

  1. Spray Dutch oven or possibly large saucepan with nonstick cooking spray.
  2. Heat over medium-high heat till warm.
  3. Add in onions, celery and garlic; cook and stir till crisp-tender.
  4. Stir in remaining ingredients except rotini and meatballs.
  5. Bring to a boil; reduce heat.
  6. Cover; simmer 30 min.
  7. Stir in rotini and meatballs; simmer uncovered an additional 10-12 min or possibly till vegetables and rotini are tender.
  8. If you like, serve with Parmesan cheese.
  9. 8 (1 1/2 c. servings).
  10. Serving Size: 1 1/2 c.. 200 calories.
  11. 14 g protein.

  13. 5 g fat.
  14. 15 mg cholesterol.
  15. 900 mg sodium.
