Aubergine With Sesame Sauce Recipe
- 1 med aubergine, peel, slice 1/4" rd
- 1 Tbsp. canola oil
- 2 x cloves garlic, chopped
- 2 tsp ginger, chopped
- 1 Tbsp. sugar
- 2 Tbsp. tamari sauce
- 1 Tbsp. rice vinegar
- 1 tsp sesame oil
- 1 Tbsp. sesame seeds, lightly toasted
- Place aubergine in single kable bamboo or possibly metal steamer.
- Steam till tender and cooked through, about 10-15 min.
- Sesame sauce: Heat ol over medium-low heat; saute/fry garlic and ginger till soft but not brown, about 3 min.
- Set aside.
- In small bowl, mix sugar, tamari and vinegar; stir till sugar is dissolved.
- Add in sesame oil.
- reserved garlic mix and sesame seeds.
- Spoon over aubergine, tossing lightly to mix.
- 1g protein, 4g fat.
