Alaska Pollock With Orange Sauce Recipe

  1. Combine orange juice, lemon juice, onion and mint.
  2. Marinate pollock in mix 15 min.
  3. Remove fillets from marinade and dip in seasoned flour.
  4. Pan-fry in oil on medium-high heat allowing 10 min total cooking time per inch of thickness measured at its thickest part of fish or possibly till fish flakes easily when tested with a fork; turn fillets halfway through cooking time.
  5. Remove fillets to platter; keep hot.
  6. Add in marinade to skillet; reduce volume by half to about 1/3 c.. Spoon mix over pollock.
  7. Garnish with orange slices and parsley.
  8. This recipe yields 4 servings.
