Chocolate Fridge Slice

  1. Grease and line base and sides of a 6cm deep , 19cm square pan with baking paper, allowing paper to extend 2 cm above edges of pan.
  2. Combine cookies, peanuts, sultanas, and cocoa in a bowl.
  3. Place butter, chocolate and condensed milk in a medium saucepan over low heat.
  4. Cook, stirring, for 3-4 minutes or until smooth.
  5. Pour over cookie mixture.
  6. Stir well to combine.
  7. Spoon mixture into prepared pan, pressing with the back of the spoon.
  8. Cover and refrigerate for 2 hours or until set.
  9. Make chocolate ganache.
  10. Place chocolate and butter in a small saucepan over low heat.
  11. Cook, stirring for 1 -2 minutes or until smooth.
  12. Remove from heat.
  13. Stand for 5 minutes.
  14. Spread ganache over slice.
  15. Refrigerate for 2 hours or until set.
  16. Lift slice from pan.
  17. Dust with cocoa powder.
  18. Cut into squares.
  19. Serve.
