Easy Gingerbreads

  1. Heat oven to 350F.
  2. Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy.
  3. Add egg; continue beating until well mixed.
  4. Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.
  5. Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness.
  6. Cut with 3-inch gingerbread boy cookie cutter.
  7. Place 1 inch apart onto large ungreased cookie sheets.
  8. Add decorations for eyes, mouth and buttons as desired; press slightly into dough.
  9. Bake 9-12 minutes or until edges are lightly browned.
  10. Remove to cooling rack.
  11. Cool completely.
  12. Pipe edge of each cookie with white decorator icing, if desired.
