Easy Gingerbreads
- 1/2 cup Land O Lakes Butter, softened
- 1/2 cup firmly packed brown sugar
- 1 (3.5-ounce) package cook & serve butterscotch-flavored pudding and pie filling mix
- 1 Land O Lakes Egg
- 1 2/3 cups all-purpose flour
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- Mini candy-coated chocolate pieces, candy buttons, chocolate chips, raisins, red cinnamon candies, etc.
- White decorator icing or gel
- Heat oven to 350F.
- Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy.
- Add egg; continue beating until well mixed.
- Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.
- Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness.
- Cut with 3-inch gingerbread boy cookie cutter.
- Place 1 inch apart onto large ungreased cookie sheets.
- Add decorations for eyes, mouth and buttons as desired; press slightly into dough.
- Bake 9-12 minutes or until edges are lightly browned.
- Remove to cooling rack.
- Cool completely.
- Pipe edge of each cookie with white decorator icing, if desired.
