Polish Mess
- 4 medium potatoes, cubed
- 1 medium chopped onion
- 2 clove garlic, minced
- 2 cup shredded cabbage
- 2 packages kielbasa, sliced
- 1 olive oil (or preferred cooking oil)
- 1 salt and pepper to taste
- 2 tsp Balti Seasoning (Penzey's Spice)
- Heat 1tablespoon cooking oil in large, deep-sided skillet or dutch oven over medium-high heat.
- Saute the kielbasa in the skillet until browned, about 8 minutes, stirring occasionally.
- Remove kielbasa from pan with slotted spoon to plate and set aside.
- Add 2 tablespoons oil to skillet and add cubed potatoes to the skillet and cover.
- Cook 7 minutes stirring once.
- Remove lid from skillet and stir potatoes.
- Add chopped onions and stir to distribute.
- Cook until onions are softened and potatoes golden brown.
- Once potatoes and onions are cooked through, add the garlic and stir to combine.
- Immediately following the garlic, add the cabbage, salt, pepper, and Balti Seasoning and stir or toss to combine.
- Cook 2-4 more minutes until the cabbage is softened.
- Add the cooked kielbasa back to the skillet and cook 1-2 more minutes or until heated through.
- Spoon into individual dishes or plates and top with Sriracha.
- Serve hot.
- (Cook's Note: For a brunch top each individual plate with a dippy fried egg!)
