Sweet and Spicy Barbecue Beans
- 1 Tablespoon Olive Oil
- 1 whole Yellow Onion, Chopped
- 4 cloves Garlic, Minced
- 8 cups Chopped Kale
- 2 cans Cannellini Beans (15 Oz Each)
- 1/2 cups Barbecue Sauce Of Choice (I Use Stubbs)
- 1/2 cups Water
- 2 Tablespoons Dijon Mustard
- 2 teaspoons Hot Sauce
- 2 Tablespoons Cider Vinegar
- 1/4 teaspoons Salt
- Preheat the oven to 350F.
- Heat the olive oil in a large skillet over medium high heat.
- Add the onion and saute for about six minutes, until soft and translucent.
- Add the garlic and saute for another two minutes.
- Add the chopped kale and cook for a few minutes, tossing frequently.
- Add remaining ingredients and mix well.
- Transfer to a 9-inch glass pan or baking dish.
- Bake beans, covered, for forty five minutes.
- **These beans freeze extremely well!
