Giant Chewy Peanut Butter And Apple Cookies
- 3/4 c. peanut butter
- 3 Tbsp. margarine
- 1 c. packed brown sugar
- 1 c. whole wheat flour
- 2 egg whites
- 3 Tbsp. skim milk
- 2 Tbsp. baking soda
- 3/4 c. quick rolled oats
- 1 medium apple (about 3/4 c.), peeled, cored and chopped
- Beat peanut butter and margarine with electric mixer on medium speed until smooth.
- Add sugar and half of flour, egg whites, milk and baking soda.
- Beat well.
- Stir in remaining flour; add oats and apple.
- Drop by rounded tablespoonfuls on greased cookie sheet; flatten slightly with fork.
- Bake at 350u0b0 for 12 to 14 minutes until brown.
- Remove, cool on wire rack.
- Store in moistproof container.
- Can freeze up to 6 months.
- Makes 16 to 18 cookies.
