Bistec Empanizado (Breaded Fried Cube Steak)

  1. Combine onion, garlic, juice, vinegar, adobo seasoning and olive oil in a bowl and whisk together.
  2. Sprinkle the steaks with salt and place the steaks in the marinade, giving them a good rub.
  3. Marinate overnight.
  4. Place crackers into a food processor and pulse until finely ground.
  5. Put enough vegetable oil in a skillet to rise 1/4-inch up the sides of the pan and turn the heat to medium low.
  6. Beat eggs in a shallow bowl and spread cracker meal in a plate.
  7. Dredge steak in the eggs and then in the cracker meal until completely coated on both sides.
  8. Fry in the skillet until steak is golden brown and well done.
  9. Drain in a paper-towel-lined plate and serve.
