Vegetable Pasta
- 3 cups prepared pasta, of choice
- 14 cup olive oil
- 2 tablespoons butter
- 1 medium yellow squash, cut up into chunks peel left on if preferred
- 1 medium zucchini, cut up into chucks peel left on if preferred
- 4 ounces fresh mushrooms, cut up
- 1 small tomatoes, cut up
- 1 garlic clove, minced
- 1 small onion, chopped finely
- 1 teaspoon salt
- 1 teaspoon oregano
- 4 ounces mozzarella cheese
- Heat 1/8 cup olive oil and butter in medium skillet over medium heat until butter melts.
- Add onion and garlic and cook until onion is tender, stirring occasionally.
- Stir in zucchini,squash, oregano, and salt; cook until squashes are tender crisp.
- Add mushrooms and prepared pasta.
- Add remainder of olive oil to coat pasta and vegetables.
- Stir.
- Add tomatoes and heat for a few minutes on low heat.
- Remove from heat and sprinkle dish with mozzeralla cheese.
