Thai-Style Slow Cooker Chicken

  1. Add all ingredients, except chicken and EVOO, to a blender and blend until smooth.
  2. Place chicken breasts in bottom of slow cooker and pour sauce over the tops.
  3. Drizzle with additional 1/2 tbsp of EVOO.
  4. Cook on low for 8 hours.
  5. Serve over rice.
