Curried Pasta and Chicken Salad
- 2 ounces packaged dried elbow macaroni
- 1 12 cups chopped cooked chicken
- 1 cup apple, coarsely chopped
- 13 cup celery, chopped
- 14 cup onion, finely chopped
- 13 cup mayonnaise or 13 cup salad dressing
- 13 cup plain yogurt
- 12 teaspoon curry powder
- 18 teaspoon salt
- 14 cup cashews or 14 cup peanuts
- 1 -2 tablespoon milk (optional)
- lettuce leaf (optional)
- Cook pasta according to package.
- Rinse in cold water, drain again.
- In a large mixing bowl combine cooked pasta, chicken, apple, celery, and onion.
- For dressing, in a small bowl stir together mayonnaise or salad dressing, yogurt, curry powder and salt.
- Pour dressing over pasta mixture.
- Toss to coat.
- Cover and chill for 4 to 24 hours.
- Just before serving, stir in cashews or peanuts into pasta mixture.
- If necessary, stir in milk.
- If desired, serve salad in lettuce-lined bowls.
