Quingombo Soup (Puerto Rican)

  1. Cook and stir bacon in large saucepan on medium-high heat 5 min.
  2. Add okra; cook and stir 3 min.
  3. Stir in chicken stock; bring to boil.
  4. Reduce heat to low; simmer 20 min.
  5. Meanwhile, place onion, sofrito and pepper in blender container; cover.
  6. Blend on medium speed until thick paste forms; set aside.
  7. Heat dressing in small saucepan on medium heat.
  8. Add the onion mixture; cook 5 min., stirring occasionally.
  9. Add to broth mixture.
  10. Cook 10 min., stirring occasionally.
