A Take on Tacos
- 2 pounds Ground Beef Or Turkey
- 1 can Spicy Hot V8 Juice, 5.5 Ounce Can
- 1 can Ro-Tel Tomatoes, 10 Ounce Can
- 1 can (15 1/2 Oz. Size) Chili Beans, Drained
- 1 can Mexi-Corn, Drained, 11 Ounce Can
- 1 package Chipotle Taco Seasoning, 1 Ounce Packet
- Your Choice Of Taco Fixings: Tortillas, Shredded Lettuce, Cheese, Salsa, Etc
- In a large Dutch oven, brown the ground beef (or ground turkey) over a medium-high heat.
- Add the next 5 ingredients and stir to combine.
- Lower heat and bring to a simmer.
- Stir occasionally until heated through, approximately 20 minutes.
- If it appears soupy, allow to simmer longer to reduce liquid.
- It will thicken as it stands.
- I served this with warmed tortilla shells along with shredded lettuce, diced tomatoes, salsa, shredded cheddar cheese, chopped green onions, chopped jalapenos, and sour cream.
- It freezes well and can be used as a starter base for taco soup!
